Small batches, because the alternative tastes like it
Everything is baked to order in Patna. Nothing sits overnight, nothing is finished before it is ordered, and nothing leaves the kitchen we would not send to our own table.
That places a limit on how much we can make in a day. We would rather work within it than around it.
